pina colada cupcakes



Piña Colada Cupcakes
makes 24-30 cupcakes

Coconut Cupcakes
  • 3/4 pound unsalted butter at room temperature
  • 2 cups sugar
  • 5 extra large eggs at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 2 teaspoons coconut rum or light rum
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 7 ounces sweetened, shredded coconut
Preheat the oven to 325. Line 2 muffin pans with liners.

In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugar at medium speed until light and fluffy, about 5 minutes. Reduce the speed to low, and add the eggs, one at a time, scraping down the bowl between each addition. Add the vanilla and rum and mix until incorporated.

In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Alternate adding the dry ingredients and the buttermilk in three additions, starting and ending with the dry ingredients. Mix until just combined, and fold in 7 ounces of the coconut.

Fill each liner 3/4 full with batter. Bake 20-25 minutes, or until the tops are brown and a toothpick comes out clean. Cool in pans for 15 minutes, then transfer to a cooling rack to cool completely before frosting.

Pineapple Puree
  • 1 cup sugar
  • 1 cup water
  • 1 pineapple, peeled, cored, and chopped
In a medium saucepan, combine the sugar and water and cook over medium heat, stirring often, until it comes to a boil. Add the pineapple, and return to a boil without stirring.

Remove from heat, cover, and allow to sit overnight.

Drain the syrup, reserving for the cupcakes, and puree the pineapple until smooth.


Pineapple Swiss Meringue Buttercream
  • 4 egg whites
  • 1 1/2 cups sugar
  • pinch of salt
  • 1 1/2 cups (3 sticks) unsalted butter, cut into tablespoons, at room temperature
  • 1 to 1 1/2 cups pineapple puree
  • 1-2 Tbs coconut rum (optional)

Combine the egg whites, sugar, and salt in the bowl of a stand mixer set over a small pan of simmering water. Whisk constantly by hand until the sugar has dissolved (the mixture should feel completely smooth when rubbed between your fingertips).

Attach the bowl to the stand mixer and fit with the whisk attachment. Starting on low speed and gradually increasing to medium-high speed, mix until still (but not dry) peaks form. Continue mixing until until the mixture is light, fluffy, glossy, and completely cool (test by touching the bottom of the mixing bowl), about 10 minutes.

With the mixer on medium-low speed, add the butter 2 tablespoons at a time, mixing well between each addition. Scrape down the sides of the bowl, increase the speed to medium, and mix until the buttercream comes together (it can take up to several minutes, but it will come together eventually). Switch to the paddle attachment and beat at medium-low speed to remove air bubbles, about 2 minutes. Gradually add the pineapple puree and rum, and mix to combine.


Brush the tops of the cupcakes with the pineapple syrup. Frost as desired and garnish with additional coconut flakes and a cherry.

crock pot mac and cheese

Slow- Baked Mac and Cheese

Ingredients


1 1/2 cups milk
One 12 oz can evaporated milk (I used skim, evaporated milk keeps the egg and milk from curdling)
1/4 cup (1/2 stick) unsalted butter, melted, cooled to room temp
3 large eggs
1/2 tsp salt
3 cups (12 oz) shredded cheese (I used an Italian blend, recipe calls for Italian fontina cheese)
1/2 pound elbow macaroni or mini penne tubes, par cooked and drained (this means cook them for about five minutes until tender but not completely cooked)
Freshly ground black pepper to taste
1/2 cup grated Parmesan cheese


Spray the inside of your slow-cooker with cooking spray or grease it with olive oil. Combine milk, evaporated milk, eggs, butter, and salt in slow-cooker and whisk until until smooth (or you can use an immersion blender to do the whisking for you).


Add the shredded cheese (not the Parmesan) and macaroni, sprinkle with black pepper (and whatever other spices you want to use). Stir gently with a spatula to coat evenly.


Sprinkle the Parmesan cheese on top. Cover and cook on HIGH for 30 minutes.

After 30 minutes, reduce the temperature to LOW and cook for 2 to 2 1/2 hours, until custard is set in the center and the pasta is tender. The macaroni and cheese may sit in the cooker on the KEEP WARM setting for 30 minutes before serving. Before dishing it up, I sautéed some bread crumbs with olive oil and sprinkled them over the top to make it a little fancier.

  1. For the octopus's body, remove the pepper's stem end and scoop out the white ribs and seeds. For the arms, slice a second pepper into strips.

  2. Place some dip or hummus (we used French onion dip) in a shallow bowl, and arrange the octopus as shown. Use a bit of dip and sliced black olives to give your creature eyes.

  3. Serve with extra veggies, such as carrot sticks, fresh green beans, lightly steamed broccoli spears, sliced cucumber, and jicama sticks.

Ingredients
9cups Rice Chex® cereal
1 1/4cups white vanilla baking chips
1/4cup butter or margarine
4teaspoons grated lemon peel
2tablespoons fresh lemon juice
2cups powdered sugar
TipsPreparation Directions
1.Into large bowl, measure cereal; set aside.
2.In 1-quart microwavable bowl, microwave chips, butter, lemon peel and juice uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
3.Add powdered sugar. Seal bag; gently shake until well coated. Spread on waxed paper or foil to cool. Store in airtight container.

Baked Creamy Chicken Taquitos

1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken
1 C grated pepperjack cheese
small corn tortillas
kosher salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.
Heat cream cheese in the microwave for about 20-30 seconds so it's soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. Usually 20-30 seconds will do it. If you find yours are cracking when you roll them or come unrolled right away, just try heating them longer and try the paper towel thing.Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges. Then roll it up as tight as you can.Place seam side down on the baking sheet. Lay all of the taquitos on the baking sheet and make sure they are not touching each other. Spray the tops lightly with cooking spray or an oil mister and sprinkle some kosher salt on top. Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown.

Creamy Lime-Cilantro Dressing

1 pack (1oz) Hidden Valley Ranch Dressing Mix (regular or buttermilk, and ignore directions on the packet) 1C mayo 1/2 C milk (or buttermilk depending on which packet you buy)

1 lime 2 cloves garlic, roughly chopped 1/2 C roughly chopped cilantro 1/4 C green salsa* hot sauce

Place milk, mayo, and ranch mix in a blender. 2T juice. Toss in the garlic, cilantro and green salsa. Blend 'er up. Sample it and add hot sauce to taste. Make it several hours ahead of time to allow it to thicken.

*A note about green salsa: There are several brands of green salsa available in most supermarkets and they have various degrees of heat. One of the most commonly seen brands is Hernandez. Hernandez brand is a lot spicier than any of the others I've tried. Even their medium green salsa is way too spicy for my liking. I like to buy La Costena because their medium is actually really mild. That way I get all of the flavor of the tomatillos but I control the level of heat with the hot sauce. If you're not used to buying green salsa, make sure to sample it first before you put it in the dressing so you know what you're getting into!

Tortilla and Black Bean Pie


  • 4 flour tortillas (10 inches)
  • 2 tablespoons canola oil
  • 1 large onion, diced
  • 1 jalapeno chile, minced (remove seeds and ribs for less heat)
  • 2 garlic cloves, minced
  • 1/2 teaspoon ground cumin
  • Coarse salt and freshly ground pepper
  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 12 ounces beer, or 1 1/2 cups water
  • 1 package (10 ounces) frozen corn
  • 4 scallions, thinly sliced, plus more for garnish
  • 8 ounces cheddar cheese, shredded (2 1/2 cups)

Directions

  1. Preheat oven to 400 degrees. With a paring knife, trim tortillas to fit a 9-inch springform pan. Use the bottom of the pan as a guide. Set aside.

  2. Heat oil in a large skillet over medium heat. Add onion, jalapeno, garlic, and cumin; season with salt and pepper. Cook, stirring occasionally, until softened, 5 to 7 minutes.

  3. Add beans and beer, and bring to a boil. Reduce heat to medium; simmer until liquid has almost evaporated, 8 to 10 minutes. Stir in corn and scallions, and remove from heat. Taste and adjust for seasoning.

  4. Fit a trimmed tortilla in bottom of springform pan; layer with 1/4 of the beans and 1/2 cup of cheese. Repeat three times, using 1 cup cheese on top layer. Bake until cheese melts, 20 to 25 minutes. Remove side of pan; sprinkle pie with scallions. To serve, slice into wedges.
